Delicata Squash with Goat Cheese and Pomegranate Seeds

Ingredients

Delicata squash, halved lengthwise and seeded, cut into ½-inch pieces

5 oz goat cheese

¼ cup lemon juice

Selo extra virgin olive oil

Pumpkin seeds

Pomegranate seeds

Sea salt, freshly ground black pepper and dried oregano
Directions
Slice delicata squash in half, scoop out seeds then slice into ½ inch half moons. Toss with Selo Olive Oil, salt, pepper and oregano and roast on 400 degrees F for 15 min.
For the whipped goat cheese, blend 5 oz goat cheese with ¼ cup lemon juice (half a medium sized lemon), and black pepper until smooth.
Spread whipped goat cheese on a plate and top with roasted delicata squash, pumpkin seeds and pomegranate seeds.
